An archipelago comprising 7,107 islands but it depends if the sea is in high tide or low tide. The Philippines is classified broadly into three main geographical divisions: Luzon, Visayas and Mindanao with its capital city Manila. Seven thousand and one hundred seven islands whether it is high tide or low tide tell us the different bites of every islands from their food. It makes different because it reflects in the history of the islands where we were colonized. Philippine food was established on a Malayan, Hindu, Spanish and American. A blend of an identity by its own emerged from the time Filipino food were influence by the American. In Metro Manila this mixture is most in evidence. Simple dishes can be seen far from the capital and was eaten of native Filipinos.



The regions have distinctive eating habits, food taste and food style from north to south. The bites of Luzon Island, in particular in Northern Luzon is very simple entrust mainly on native vegetables, fish, poultry and meat. Like saluyot vegetables and bagoong was one of the cooking identity of Northern Luzon. While other provinces steam their vegetables and dipped also in bagoong. There are also some food like vegetables that boil with pork and fish as pinakbet and "dinengden". People live simple that reflects well in their dishes they only use simple procedure and ingredients.




In the bites of Central Luzon cooking is the mostly involved in different ingredients. The people have a passion for meat mostly in pork and poultry. Single dish, long, and detailed preparations and festive views. They were all admired of well known rellenong bangus or chicken, embutido and spicy sauces. Where in some bites in Southern Luzon were coconut, fruits, vegetables and rice. Bountiful freshly water that gives as fresh fish. Their cooking tends to be sour because they usually use vinegar, tamarind, kamias, and pepper. Sinigang is my favorite dish pork or fish. Spicy foods were also their delicacy like bicol express and laing.



The bites of Visayas, were also salty because their fish were salted and dried it is called daing. Some fish were eating in raw like kinilaw and also they love fish with vinegar called "paksiw". The part of Mindanao Islands is in dwell by ethnic groups. Proceed in Mindanao bites, were foods also cook in a simple way. You can’t taste the pork here because pork were prohibited in Muslim because they believe that pork is sacred and worshipped it as God and that was misconception. They only want to maintain their good health. They love hot chilies and strongly flavored spices such as cury. Their foods are closely similar to Indonesian and Malaysian native fares.




Every food was different in each place from Luzon to Mindanao. The kind of food they eat and the preparation is depend on the living that they have in their community. It’s a natural thing that we love to eat and experiment what we’re eating more twist of foods and mix it in different food of other country. Filipino recipe today grows numerically and tastefully hopefully as more as 7,107 islands that we have deliciously made in every single bite.
